4 egg whites

2/3 cup sugar

1/4 cup all-purpose flour

1/8 teaspoon salt

1/2 teaspoon almond extract

4 cups coconut

1/4 cup chopped red candied cherries

1/4 cup green candied cherries 

Grease and lighty flour cookie sheets. In a large bowl beat egg whites until foamy. Add sugar, flour, salt and almond extract. Blend well. 

Stir in coconut and read and green cherries. Drop onto the greased and floured cookie sheets by tablespoons 2 inches apart. 

Bake 325 for 15-17 minutes. Makes 24 cookies 

*hint: I use parchment paper instead of greasing and flouring cookie sheets.
