    I recently discovered cooking with Pesto. I cheated and bought a jar of it instead of making my own. The jar of pesto is small and cost about 2 bucks, it has olive oil, the ground pine nuts, basil of course, grano padano cheese and garlic in it. I’ve made 2 family dinners with it and not even used half the jar yet, so a little goes a long way. Store in fridge after opening. It’s so flavorful that it can take place of other more fattening things and completely change your tastebuds towards ‘lighter’ dishes! I’ll be adding more dishes to this postas I try more things…oh and I’m feeding these dishes to my family and so far no complaints!! 

    Easy Pesto Rotini

    2 cups dry wheat Rotini pata cooked according to pkg directions;drain

    2 tsp.’s pesto

    drizzle of olive oil

    1/2 cup shredded mozzerella

    few sprinkles of freshly grated romano cheese (or parmesan) 

    Warm a medium serving bowl in microwave and pour the cooked and drained rotinin in it, spoon pesto and drizzle a little olive oil over pasta then stir until the pasta is coated. Now sprinkle cheese and cover the dish just until cheese begins to melt. Serve immediatly. Use as a side dish with any kind of meat or fish and a nice tossed salad.
