QUESTION
I have a question. If you are baking and the recipe calls for two eggs and you have double yoke eggs, do you use one of the double yokes or two?

  • Serena Adkins Ellison you can use it as a single egg… the pastry or cake will be richer for the yolk but the white is the same, which is your binding agent. If it calls for 2 eggs.. you just use two..cause your binding is still an important factor.
