DIABETIC COOKIES

For my diabetic husband I make these simple peanut butter cookies. I even use them in his sugar-free banana puddings. He loves it both ways.
1 c. natural peanut butter
1 c. splenda
1 egg
I usually throw in 1 T. brown sugar for better taste
roll into balls, mash with fork in cross-wise design as usual for these cookies
