A friend of mine that has worked in the restaurant business for years told me about this batter. Apparently, a lot of restaurants fry fish and onion rings in it. I also understand that a lot of Chinese Restaurants fry their shrimp in this kind of batter. 

Ingredients: 

1 egg

1 Cup pancake mix

8 ounces 7-Up (approximately)

Additional pancake mix 

Directions: 

Mix egg, pancake mix and 7-Up together well. Dip thin fish fillets, which have been coated with pancake batter (shake both in plastic bag) and chilled about 20 minutes in mixture. 

Remove one at a time and deep fry for 4 to 6 minutes at about 400 degrees. Remove onto paper towels to drain.
