Chilli Glazed Shrimp
1 pound peeled and deveined shrimp
¼ to 1 whole habanero pepper depending on how much heat you like
1 teaspoon of olive oil
1 tablespoon red onion chopped
1 garlic clove
1 tablespoon red bell pepper chopped
1 teaspoon of fresh ginger peeled and minced
1 tablespoon honey (local not synthetic)
3 tablespoons good quality apple jelly
Salt and pepper to taste

Directions:
Peel and devein shrimp and set off to the side in a bowl full of ice. In a blender liquefy all the rest of the ingredients. In a frying pan add the blended ingredients and cook for about 5 minutes on a medium heat. Add juice of half a lime and cook down until the ingredients have thickened up again. Then turn up heat to high and add shrimp. Cook until all the shrimp are coated with sauce and have cooked through. C for cooked O for overcooked. This takes about 2-3 minutes. Serve hot.
