SERENA’S CHICKEN ALFREDO PIZZA


make your easy pizza crust dough (recipe posted at bottom of page)

 

and let it rise in warm place with covered towels (notice today I am using a quick method by putting my oven door down (it has just been turned off) and placing a pizza pan on the door and a towel in the pan then putting my covered bowl on top of the dish towel- helps raise my dough a little nicer)


roll out the dough and press down onto a greased pizza pan that has been scattered lightly with corn meal. (today I am using Italian seasoned bread crumbs instead of the usual cornmeal) 


Make your alfredo sauce  (I will post recipe at bottom)

Then add your cooked boneless chunks of chicken to the alfredo sauce (you can grill it, boil it, fry it, bake it… whatever just as long as it is cooked and chopped up, you can even use leftover chicken from a rotisserie) Today I took two good size boneless chicken breasts (they were frozen) so I opted to brush them with zesty italian dressing and put into a 400 degree oven for about 30-40 minutes till they were done but still moist..  then I cut up one in small chunks and add it to the alfredo sauce.. took the other and sliced it into bigger chunks to go on TOP of the pizza



Now leaving an outer ring for a crust you will add on some alfredo sauce with chicken to the un cooked pizza dough

sprinkle some black pepper and if desire for heat a shake of red pepper flakes lightly and then sprinkle some parsley flakes

add your larger chunks of chicken

take your brush and brush on some olive oil or veg oil to the edges of crust then sprinkle parmesan cheese around crust edges

you may now add your extras.(Things you like) . mushrooms is a good one, also great is small chunks of broccoli, some put red vidallia onion or even chopped spinach.. you can make it different each time just by playing with it and making it to order for whoever is eating it.. just keep the basics then add what you want to make it your own

Today I am adding for a splash of color some peeled Roma Tomatoes that I had saved out of my batch of tomatoes I was canning yesterday….. I also added some microwaved steamed broccoli pieces I would have added mushrooms but my hubby doesn’t like them so I am being nice today hahaha


sprinkle some mozarella cheese and shake lightly with dried basil

bake in 400 degree oven for about 12-15 minutes or till crispy on bottom .. (tip) I like to hit BROIL at the end of baking so my pizza looks as pretty on top as the ones at the pizza parlor..

I also made another one of my pizza’s today.. using my homemade Roma Tomato Pizza Sauce…

paired with the chicken alfredo pizza, they made a fantastic meal

Recipe for my Creamy  Alfredo Sauce

8 ounces cream cheese, cubed
3/4 cup grated Parmesan cheese
1 clove garlic, minced
1/2 cup (1 stick)  butter or margarine
1/2 cup milk (regular milk)

dash of pepper

and a sprinkle of parsley flakes.. not too much

In large saucepan, melt butter and saute garlic until almost soft. DON’T BURN GARLIC Add mushrooms  and broccoli if desire and cook for about a minute.
In a saucepan, combine cream cheese, Parmesan cheese and milk. Stir over low heat until smooth.

 

Recipe for my EASY FAST Pizza Crust

1 Tbsp  dry yeast

1 cup warm water
1 tsp. sugar
1 tsp. salt
2 Tbsp. vegetable oil
2 1/2 cups Self Rising flour

some cornmeal for bottom of crust

Dissolve the yeast in the water. Add the rest of the ingredients in and mix. put in greased bowl cover for 5 minutes

come back and put out onto lightly floured board knead till dough is smooth
