POTATO CAKES

Leftover Mashed potatoes are never to be thrown away.. there is always something you can do with them.. here is an old time favorite.

  • well seasoned leftover  mashed potatoes



add in about 1/4  cup Grated Parmesan Cheese

handful of shredded cheddar cheese

little bit of chopped onion

optional if you want to add chopped green or red pepper

Salt

Pepper

1 egg

  • Combine potatoes and cheese, mix well with your hands

     

     

     

 

 


  • Form into small patty cakes in your hand then flour well on each side using self rising flour

Fry in small amount of hot fat (I use a small tab of real butter for flavor and some veg oil to keep it from burning)

cook on high heat at first then turn down to get good and crisp, careful not to make your patties too large or they will fall apart.  Season to taste

let drain on slotted pan or on paper towel then put on platter and serve hot
