2/3 Cup sugar

1/3 Cup water

fruit of your choice 

Directions: 

In a small saucepan, cook sugar and water till light brown. Dip fruit in caramelized sugar. Allow the sugar to harden, then dip the fruit in caramelized sugar again. Makes about 1/3 Cup. 

NOTE: Both fresh and dried fruit can be caramelized by following this method. Candied fruit and citrus peel can also be caramelized. These can be sandwiched together with a marzipan filling before being caramelized.
