Caramel Icing
From the kitchen of: Denise Kellum

1 stick
1 box margarine
Brown sugar
¾ cup (1 small) Evaporated milk
Pinch Salt
1 tsp. Vanilla
1. Melt margarine in saucepan.
2. Mix brown sugar, milk and salt together. Pour into margarine.
3. Bring to a good boil. Cook 3-4 minutes to a soft ball stage (Soft-Ball Stage occurs at 235-240 degrees.)
4. Take off heat and let cool, stirring constantly. When cool, add vanilla.
5. Beat by hand until smooth. (Can set pan in cool water to thicken)

Easy Version of Caramel Icing Caramel Icing
From the kitchen of: Denise Kellum

Icing for 3 layers:

3 cups Sugar
1 cup Milk
1 ½ sticks Real butter
45 Kraft caramels
1. Mix together and cook for 14 minutes. (after it starts boiling)
2. Take off stove and add caramels.
3. Beat with hand mixer until caramels melt.
4. Ice cake quickly and do not answer phone while icing cake.

Notes: I use Butter Recipe Duncan Hines Cake Mix.

Yields: Makes enough frosting for a 3 or 4 layer cake.
