Canned Trout

So we do a LOT of trout fishing.. we really enjoy it. Sometimes we end up with a ton of trout.

We do eat some freshly fried, and we do freeze some of them for later, but another thing we do is CAN some of our trout! The canned trout is very easy to do and very cost effective. Have you priced Canned Salmon lately? WELL. we LOVE fried Salmon Patties and so we use our canned trout the same way .. only it is trout not Salmon.. and honestly it tastes just as good or even better.. enjoy.

you will need the following:

4 – pint mason jars

lids rings

Table Salt

Cleaned Trout (have it skinned gutted, head cut off, Do not debone for this recipe)

with heads tails fins chopped off

1 Large pressure cooker or canner

1 wire rack

1 dish towel

Jar lifter

1st clean and sterilize the jars check for cracks ectÖ

2nd pack jars with fish (do not de-bone)

leave 1 inch headspace

3rd add 1/2 Tsp. Table Salt

4th Seal jars tight but not too tight or will crack

set on wire rack in cooker and add 3 inches of water

5th lock cooker and bring to 11lbs of pressure for 1hr and 45 min

DO NOT USE QUICK RELEASE METHOD. Turn off stove and let cool down naturally

6th take out jars carefully and set on towel watch and make sure the seals pop. If one doesn’t pop put in fridge for use.

Make Patties out of trout (just like you would Salmon) and Fry it.

These are great made just like salmon patties (recipe in breakfast column )
