2 pounds sweet potatoes

1 cup orange juice

1/2 cup firmly packed dark brown sugar

1/3 cup dry sherry

2 tablespoons butter or margarine

1 tablespoon McCormick® Orange Peel

1/2 teaspoon McCormick® Ground Cinnamon

1/4 teaspoon McCormick® Ground Ginger

1/8 teaspoon McCormick® Ground Cloves

 

Instructions:

1. Scrub sweet potatoes and place in saucepan. Cover with cold water and heat to boil. Cook just until barely tender and still firm, about 25 to 35 minutes. Do not overcook. Drain and set aside to cool slightly.

2. When cool enough to handle, peel potatoes and cut into 2-inch pieces. Arrange in 8-inch square baking pan.

3. Place remaining ingredients in saucepan and heat to boil, stirring. Boil 3 minutes and pour over potatoes.

5. Bake, uncovered, in 350 degree F oven 1 hour, basting often to glaze.

Quantity:

Makes 6 servings, cup each
