BUTTERMILK ICING

3 Cups Sugar

1 Cup Buter

1 Cup Buttermilk

2 Tbsp Light Corn Syrup

1 Tsp baking soda

1 cup finely chopped pecans

1.  In 4 quart saucepan over medium heat, heat first 5 ingredients to boiling, stirring constantly

Set candy thermometer in place: cook, stirring occasionally, until temp reaches 238 F. Or until a little of the mixture dropped in a cup of cold water forms a ball.

2. Pour the mixture into large bowl. with mixer at high speed, beat to spreading consistency, about 7 minutes, occasionally scraping bowl with a rubber spatula, Fold in chopped pecans.
