RECIPE SUBMITTED BY Patricia Stover

I fixed one of my son’s favorite meals for supper tonight: beef roast with egg noodles and gravy and Allen’s green beans. I hadn’t made it in a long time and it sure tasted great. I cooked my roast in my new electric pressure cooker which I love. I’ll never use a regular pressure cooker again!

I cooked the roasts in beef stock in a pressure cooker.

I saved the broth overnight, removed the fat from the top, and made gravy out of it. I cooked the noodles in water on the stove top.

I served it w/ a side of green beans. To make the gravy, I added a can of mushroom soup to the broth, whisked it, then made a slurry of corn starch and water to thicken it. I didn’t sear the roasts like I usually do.
