ANTIQUE SPICE CAKE WITH BAKED FROSTING

This is a very old recipe..  It is a very simple and plain cake.  Very good paired with Vanilla Ice Cream and I think next time I would add some warm caramel on top and maybe even add some apple chunks to the batter

Preheat oven at 350

  • Cake

1/2 cup shortening

1 1/3 cup sugar

2 eggs

2 1/2 cups sifted cake flour

1 tsp nutmeg

1/4 tsp cloves

1 tsp baking soda

1/2 tsp salt

1/2 tsp nut meats (optional)

1 cup raisins

1 cup sour milk or buttermilk

Cream shortening and sugar together

add eggs one at a time beating well after each addition.

Sift flour with spices soda and salt.

Add flour and milk alternately beating only till smooth

Add nut meats, raisins

Pour into well greased 9×13 pan

Spread with frosting before baking

  • BAKED FROSTING

2 egg whites

1 cup light brown sugar

pinch of salt
1/4 cup of nut meats (optional)

beat egg whites till stiff

beat in sugar and salt.

Spread over cake batter and sprinkle with nut meats before placing in oven.

  • bake at 350 30-40 minutes or till done. … top of frosting may get browned before batter is done so take sheet of aluminum foil and place over top at end of baking time to keep from over browning.

Slice and enjoy with cold cream or ice cream. =)
