You can do many things with a stuffed meat ring.. you can do ham and cheese, pepperoni and Cheese, throw in some veggies even if you want… but today I am doing meatballs and cheese cause I had some leftover meatballs that I had frozen..


Start out using the Basic Bread Dough Recipe (click here)

Once you get your bread dough started..  cover loosely with damp cloth let it raise 1 hour

  • if doing a ham ring you would prepare filling with  1 cup finely diced cooked ham,

1 cup shredded cheddar cheese, parsley, basil, oregano or chives.,. mix together and have ready…

  • if your doing a pepperoni ring.. have your slices of pepperoni ready, some sauce, and some mozzarella slices or provolone, can add mushrooms onions and banana peppers if desired
  • if your doing a meat ball ring take your meatballs and slice them up..you will  pair with provolone and or mozzarella cheese can even throw in pepperoni if you desire

Lightly grease or spray a baking sheet

Punch down dough and on a floured surface using a floured rolling pin, roll into a 20×12 inch rectangle, if using herbs sprinkle at this time with your herbs,,, I used a bit of parsley, oregano and basil not much just a pinch

spread filling evenly over dough to within 1 inch of edges.

today I am using meatballs  that I sliced up

Next place cheese lengthwise remember you will be rolling this up

I threw some pepperoni on there as well

Starting with a long side, roll up dough, jelly roll style. Pinch ends to seal

 

Shape roll into a 10 inch circle. Pinch ends together to seal.

Place loaf seam side down on a prepared baking sheet. cover loosely with a damp cloth and let rise in warm place until almost doubled about 1 hour.

 

preheat oven to 350

prepare a glaze by mixing 1 large egg yolk with 1 tablespoon of water and brush top and sides of loaf with glaze.

 

now make 1/4 inch deep cuts or slits in loaf at 1 inch intervals

bake meat ring until golden brown, 35-40 minutes… you can tell.. just watch it. Transfer loaf to wire rack to cool slightly or to dish

Cut …. Dip…. and ENJOY!!!!! HAPPY NEW YEAR!!!

Stuffed Meat Ring with a few alterations. I used a pizza dough recipe I already had in replace of the one in the recipe. I made a homemade roasted garlic white sauce and spread that on the dough. For the meat filling I mixed up 1lb ground turkey, 1 egg, 6 slices of bread, toasted and made into crumbs, 1 tsp salt, 1 tbs worchestire sauce, and 1 can of kidney beans, pureed. I then browned this mixture and spread it on the dough. Topped with diced tomates and colby jack cheese then followed the rest of the recipe as shown. Very yummy and a huge hit with my teenager and toddler!
