Serena’s Chowder “Italian Style”

 

This is my original recipe.. this stuff is so good.. hate to brag LOL but it is goooood =P

Start out by cutting up a medium onion and throw it in your pot


I then cut off two good chunks of real cows butter. (You can use butter or margarine)

Saute your onions in the butter

while they onions saute, be mincing up two small or one very large clove of garlic

add to the onions

Next I added a quart and a half of Roma tomatoes in juice

it equals to about 5 1/2 cups

pour it in with the onions and garlic

next add 1 can of beef broth

add salt and pepper.. this is your FIRST time seasoning, you will add it again in the end after tasting.

add Parsley flakes a good shake or two

3 Tbsp sugar

add a pinch of cayenne pepper

Tbsp flour

use an emulsion blender….  and blend your broth till chunks are gone and all is smooth

Add two Tbsp of Parmesan Ramono Cheese ..

add some Grated Parmesan Cheese

Add your Paternoster Pasta or as some call it “Ditalini” about 2 cups

sprinkle in a dash of Oregano

Add Salt and Pepper

Add 1 cut up skinless chicken breast to a frying pan with butter, salt pepper, parsley flakes

cook till done and add the chicken to your chowder.

Take Parmesan Ramono and sprinkle on top fo your hot chowder

Serve… ‘molto squisito’
