SERENA’S NO WASTE – CHEESECAKE PIE

Tastes like, but better than, and firmer than those store bought boxed cheesecakes..

I had some filling left over from making my homemade Danish pastries the other day.. so if your like me you hate to throw away things especially food.. my dad called it WASTEFUL. So it’s fun to experiment with these leftovers and see what creation we can make out of them..

here is the Lemon Cheese Filling recipe I used for my Danishes

  • For the LEMON CHEESE FILLING

1 cup Ricotta cheese

1 pkg Cream Cheese

1 cup granulated sugar

1 large egg yolk

1 tsp lemon juice

1 tsp orange extract

1 tbsp lemon extract

mix together and put into bowl in fridge till time to use.

 

So like I said, I had a lot leftover… so here is what I did.

Add one more block of  cream cheese

add two-3 Tbsp Self Rising flour

add about 3 Tbsp granulated sugar

mix well with mixer.

should be of thick consistency.

Pour into graham cracker crust (I had one pre made but you can EASILY make your own by mixing crushed graham cracker crumbs with melted butter and pressing around the edges of your pie plate then bake it for about 5 -10 minutes till set).

Next you take some strawberry jam and dollop around the top and run knife through to swirl

Put into 350 degree oven and bake about 20 minutes or so.. take out and put in fridge till  COMPLETELY COOLED and cut and serve. mmmmmm good.
