LOW FAT SOUTHWEST CHICKEN STEW


4 Boneless Skinless Chicken Breasts cut into large cubes

Tbsp green pepper (or to your liking)

small onion chopped

3 cloves garlic, minced

1 heaping  tsp chili powder

 

1/4 teaspoon cumin powder

tiny bit salt or omit all together

pepper

1 can chili beans in zesty sauce, undrained

1 can stewed tomatoes, chopped, undrained

fill up tomato can and add water

1 can pinto beans drained and rinsed

1 can kidney beans drained and rinsed

 

1 can yellow sweet corn drained

1 Cup mild chunky salsa

Directions:

 

 

Cut chicken into large cubes and onions up small

 

Place thawed rinsed chicken cubes  in pot, with onions and stir on medium low heat NO OIL..

 

 

keep stiring as not to stick..add in green pepper

 

 

add in garlic continue to stir and brown..

Sprinkle black pepper, chili powder, cumin and salt over chicken; toss to coat.

Once chicken is cooked and tender 

Add chili beans, tomatoes, and water

 

 

 

add rest of beans and corn and salsa

Cover and simmer on stove

taste add more pepper if needed

serve over top corn tortillas with low fat shredded cheese over top lightly.. very very good!!!!!
