GRAHAM CRACKER CREAM PIE

16 Graham Crackers (large size)

1 tsp flour

1/2 cup softened butter

1/2 cup sugar

1 tsp cinnamon

Finely crush crackers, combine with remaining ingredients, blend thoroughly and press one half mixture firmly in even layers to bottom and sides of a well buttered 8 inch pie plate

FILLING

2 tbsp cornstarch

1/4 cup sugar

1/4 tsp salt

2 cups scalded milk

3 egg yolks

1 tsp vanilla

Mix thoroughly cornstarch sugar and salt. Add slowly to hot milk. Blend thoroughly. Cook in double broiler 15 minutes, stirring frequently. Blend a little of this mixture with the egg yolks. Return to double broiler, stir and cook until edges are set, about two minutes. Add vanilla and pour into cracker crust

MERINGUE

Make a meringue of 3 stiffly beaten egg whites and 3 tbsp granulated sugar. Spread on top custard fillings. Sprinkle meringue with remaining crumbs. Bake in a slow oven 300 degrees until lightly browned about 20 minutes.
