Corn Muffins in Poblano Cups 

1 box corn muffin mix (Jiffy)

1/2 cup shredded Mexican cheese blend

1 (7 oz.) jar chopped pimentos

2 tbsp. freshly chopped cilantro leaves (can use parsley instead)

6 poblano peppers, halved lengthwise and seeded 

Preheat oven to 400 degrees

Coat a large baking sheet with cooking spray

Prepare muffin mix according to package directions adding cheese, pimentos and cilantro to the ingredients

Arrange peppers on prepared baking sheet

Fill each pepper with an equal amount of muffin mix

Bake 18 to 20 minutes or until toothpick inserted in muffin, comes out clean
