One of the Blackberry Wine Cakes I baked for my daughter.

Yellow cake, substitute Blackberry wine for water, mix blackberry wine and powdered sugar for the glaze, pour on top of hot cake as it comes out of the oven or blackberry jam for topping.

Johnnie Smith Okay so here is the Blackberry Wine Cake…..But I subsituted the Blackberry Wine with Welchs Grape juice. Instead of using a 1 whole cup of juice I used right under a cup and added 2 tbsp of welch grape jelly. For the Glaze I also added about 2 tbsp of jelly to the Glaze. Now, I tasted it and it was okay, but I suddenly remembered I am not big fan of Grape stuff. lol I am sure the ones that like grape will love it. I also think I added too much Glaze b/c the bottom of the cake was wet afterwards. Next time I am going to try it with Pineapple juice b/c I Love Pineapples.


  • Rick Thompson Try peach nectar and peach preserves. It will be most on the bottom if to moist try less liquid when mixing the glaze.
