Oldie, but Goodie recipe…in response to someone asking for a cookie recipe. This was made on Monday’s, when ladies always did the laundry, these were made while the laundry was working so the family had warm, yummy cookies for Monday evening dinner. These used any extras you might find in the kitchen on any given Monday. I must give the credit for these cookies to a lovely lady in the little coal mining town that I grew up in…Mrs. Thelma Williams
WASHBOARD COOKIES – I love the name!
Bake @ 375 for 8-10 minutes
2 Cups light brown sugar
2 sticks Butter
Cream together well
then Add:
2 eggs
1 teaspoon vanilla
mix together well
Take – 1/4 Cup warm water & 1 teaspoon Baking Soda & mix until it fizzles & cools
Then add all wet ingredients to the following dry mixture
4 1/2 Cups AP flour
1 teaspoon salt
1 1/2 teaspoon baking powder
Mix all together well, then slowly add any options like…nuts, raisins, chocolate chips, coconut…1 option or many, just whatever you happen to have
(Chill overnight for fatter cookies)
Make golf ball size balls, then criss-cross top with fork
