Ingredients
2 ½ cups all- purpose flour
2 teaspoons baking soda
½ teaspoon salt
1 teaspoon ground ginger
1 teaspoon cinnamon
½ teaspoon clove
1 cup sugar
1 cup vegetable oil
1 cup molasses
1 cup boiling water
2 eggs well beaten

Directions
Preheat oven to 350° Whisk together flour, baking soda, salt and spices in a medium bowl and set aside. Mix together sugar, vegetable oil and molasses add boiling water and continue mixing. Add flour mixture slowly, scraping down sides when needed. Add well beaten eggs. Transfer batter to a well- greased 8×8 pan and bake 40 minutes or until ginger bread is done.
Cooking notes
I don’t even own an 8×8 pan, I like using tall round casserole dishes because it just makes the bread look pretty but it takes a lot longer to cook. 1 hour and 5 minutes for this one.
