TURKEY STOCK FOR CANNING
CANNED TURKEY STOCK
In a tall stick pot, fill it over halfway with water and a good amount of salt.
next get out of the freezer your “trash ends/saved scraps”
I save my (trash ends) in a freezer bag, adding to it every time I make something. I just put all my scraps in the bag for later to make my stocks.. such as carrot ends and pieces I froze because I wasn’t gonna use them before they got soft, same for celery. Also onions and don’t worry about the onion peeling it also has nutrients. I also have another gallon freezer baggie I save with chicken or turkey bones and carcass. and I always leave a little meat on them.
add trash ends to the stock pot.
black pepper heavily
add two bay leaves, some fresh sage and a pinch of powdered sage as well, and some parsley
add in your turkey bones (for chicken stock chicken bones)
bring to a boil
may or may not need to add more water, you can tell.
you don’t have to do this part and it will be just fine but I like to add a tbsp of chicken flavored knorrs.
put a big stock pot in your sink and a fine mesh deep strainer over that. and pour your hot stock carefully into the strainer..
it will smell beautiful and should be a beautiful gold color ..
take your liquid gold and ladle into clean canning jars. if you don’t have enough to make a whole canning and your short just a little, top it off with some chicken broth or water if it is just a small amount your short.
clean rims well of oil and place lids and rings.. put your hot jars into canner that already has water heating so you won’t shock your glass jars.
Pressure can your quarts of broth 25 minutes at 10 lbs of pressure
SUCH a tasty broth.. I love it.. NEVER throw away those turkey carcasses from thanksgiving.. grab you a baggie and take that turkey home.. .. if I don’t make soup out of it I make broth.. either way it shouldn’t be thrown away! Same for your chicken rotisserie carcasses.. keep them! Freeze and use on a rainy day to make broth. Saves money and is delicious and it is great in a hurry when you want to make something good but you don’t want to start from scratch.
