TURKEY SOUP FROM LEFTOVER TURKEY CARCASS

After we enjoy our Thanksgiving Turkey, and I am taking off the extra meat for storage, I like to remember to grab a ziplock freezer bag and Store my Turkey Carcass in the bag, throw all of it in there, wings, skin and all, leave a little turkey meat on the carcass too if you can. And any drippings from your bird pour that into the bag as well. Get all the air you can out of it and simply place in the freezer for when you are ready to use it, because we know you are probably full of turkey and may want to wait a while.

In this photo it was so cold here so I decided to pull my carcass out of the freezer earlier than I had planned and make my bone broth so I would have my soup ready for when I got off work the next day and just add my noodles then.

Start with your turkey carcass

throw her into a large stock pot, add cold water to the pot.

Cut up four carrots and add to the pot

add 3-4 sticks celery and leaves, cut up

add 1 fat onion chopped

I sprinkle in a little pinch of rubbed sage to my stock

3 bay leaves

a pinch of red pepper flakes

Parsley

basil

salt and pepper

lots of pepper

1 can of diced tomatoes ( I like the basil infused tomatoes)

let your stock boil a while, you will gradually turn down and go into a slow simmer, this will build your flavors in your broth. Taste and adjust seasonings if needed.

Your meat has fallen off the bones you will begin to fish out the bones from your stock. Also fish out the bay leaves.

I actually do a very small turkey breast every year as well at thanksgiving for my hubby and I cook it in cream of chicken soup so it will have a gravy over it .. I always take my leftovers from that turkey breast as well as the gravy it is in and I add that to my stock I made.. because it just adds more flavor and meat.


last thing I have to do is add my noodles. Tonight I chose wide egg noodles.

This soup has a very rich broth with deep flavor. It smells amazing. And best of all you have no waste.
