Strawberry Squash Sweet Bread

recipe inspired by Brianna Hubbards Yellow Squash Muffin Recipe

Directions
2 cups cooked, seeded, shredded yellow squash

cook in one cup of water in sauce pan

take off heat after you cook it a little, and drain well.. then after cooled enough to handle squeeze or press all the excess liquid you can out of the squash

add
1/2 cup butter melted
1/2 cup applesauce

Next..

in a separate bowl 2 cups cut frozen strawberries , and add some sugar over top (frozen chopped strawberries will hold up better when baking)

Now you will mix together
3 cups all purpose flour
1 1/3 cup sugar
6 teaspoons baking powder
1 tsp salt.

Combine wet ingredients and then add in dry ingredients along with two eggs

mix together then add in strawberries

put in two sprayed loaf pans (I like Bakers Joy spray)

add good amount sugar sprinkled to tops evenly


Bake in oven at 375 for about 45 minutes.or till done

cuts beautifully..

I also like homemade cream cheese icing on my zucchini bread so I had some in the fridge from VBS and tried a few dollops on this and was even better.. y um

makes two loafs or 30 muffins.. muffins would cook  in half the time frame enjoy
