STRAWBERRY PEACH COBBLER


I took some frozen strawberries out of the freezer and didn’t even thaw them.. just stuck them in my pot. Turned on the heat and let them start to thaw in the pot.. then I added about a half a cup or more of white sugar … didn’t measure.

Next I added one quart of my canned peaches with the heavy syrup.

I took a small cup and added 3 heaping tbsp of cornstarch and added a tad of water, mixed with fork until smooth in cup then poured into the boiling fruit mixture. stir and turn down heat to simmer. should thicken some.

Now your oven should be preheated to 350.

Pour one stick of melted butter in a 9×13 pan. (can spray sides of pan if desire, not necessary though)

in mixing bowl, add 1 cup sugar, 2 eggs, 1 cup self rising flour, 1 cup milk, tsp vanilla, and a tbsp of pancake batter.

mix well.

Pour the fruit mixture over the melted butter in the 9×13 pan.

sprinkle some dry pancake batter over top of the fruit (not much just a couple tbsp)

now pour your mixing bowl of mixed batter over top and spread evenly.

Put in oven and bake till done.. about 25-30 minutes

serve warm with fruit over top and pour about 1/4 cup of milk over top of warm cake.. eat with spoon.. delish!
