STRAWBERRY CHEESECAKE WITH GRAHAM CRACKER GRANOLA CRUST

Use two  sleeves of honey graham crackers

grind fine in food processor or pit in zip bag get air out and using a rolling pin bang away add in some sweetened granola and pulse (or bang down )

 

next add 5 tabs of butter in processor and 1/2 cup sugar

mix well

spread in 10 inch spring form pan and work up sides and sprinkle a little sugar lightly over crust and continue to press down

tip use a piece of aluminum foil to press down tight

bake crust in oven at 325 for 10 minutes.
take out, and if crust looks greasy lightly blot with paper towel and let cool while you make filling

 

Filling

5 room temperature 8oz blocks of cream cheese

add to mixing bowl

add 2 cups sugar

mix low speed and scrape sides then add in 3 eggs one at a time

add two tsp vanilla and scrape in pulp from one vanilla bean.

I get to use homemade vanilla my friend Raquel made and sent me

 

mix

pour in mixture over crust.

Using a strawberry pie filling take a case knife and dip in  pie filling

then drag through top of cheesecake – repeat all the way across then the other way

Place in 325 degree oven and place a metal bowl with tap water beside the cheesecake

turn an oven to 300 degrees and bake for 1 hour

take out cheesecake from oven

leave in mold

let sit all day (or night if you made in evening)

then add aluminum foil to top and place in fridge

Day of serving un-mold cheesecake and add more strawberries 🍓
