SERENA’S ZUCCHINI CAKE (BREAD WITHOUT THE ICING)
IF YOU WANT ZUCCHINI BREAD… just omit the icing and put into loaf pans… =)
CAKE
3 eggs beaten
2 cups sugar
2 tsp vanilla
2 cups zucchini (Grated) Drain by squeezing all water out
1 Cup Oil
3 cups self rising flour
1 can crushed pineapple (drained)
1 cup raisins
2-3 tbsp cinnamon
I have been known to add chopped apple and even shredded coconut if I felt like it…. (totally optional) small pecans if desired (again optional)
sugar cinn mixture for top crust if making bread..
DIRECTIONS
First measure out 2 cups of shredded zucchini..
can shred skin, or peel and shred as well I always used to just shred with my slaw shreder until got me an old time hand crank peeler that is PERFECT for zucchini.. it shreds it for me with less effort LOL .
MAKE SURE you squeeze all the water out of your zucchini before measuring and putting into batter
Beat eggs sugar vanilla oil and zucchini till creamy.
Stir in crushed pineapple (that has been DRAINED and SQUEEZED) and raisins.
I added some chopped apple and a small handful of shredded coconut with some pecans for good measure this time…
Pour in a prepared 9×13 pan (or loaf pans if your making bread)
If making bread you make a sugar crust by taking a sugar cinn mixture and heavily sprinkling over top of cake… (I am doing it on my cake too even though I am putting icing on it.. YUM.)
and bake at 325 1 hour .. at this point you need nothing it is so good but……
to make it even better…..add icing to top mmmmmmmm let it melt into a glaze while warm let it melt into cake then put on another layer.. oh yum…. OR I sometimes make loafs and then cut the loafs in half THEN when fully cooled I put THICK icing in between the loaf layers.. now that is my mom’s favorite.. but this way is mine.. cause I am more about the bread with a touch of sinfully sweet icing..
Cream Cheese Icing 1 can pillsbury cream cheese icing OR make it better with homemade
16 oz powdered sugar
1 tbsp vanilla
1 stick butter softened
1 block cream cheese softened
Mix together well with mixer till thick then add vanilla.. so many varieties.. you can pour the icing over while hot and get a glaze like this one below
Or you can you let it cool and put it on thick like mom likes .. her favorite.. is the zucchini layer cake
