So this dish I made up today was heavily inspired by my friend Tracy Keen’s dish she posted the other day.. I was actually going to make HER dish when I switched gears because I really wanted mine to be very cheesy.. mine ended up a cross between cheesy macaroni meets taco style chili.. VERY DELICIOUS!!!!

Thanks for the inspiration Tracy.. that is why I love swapping and sharing recipes.. you never know what you may end up making next with all the ideas and creativity shared amongst friends.. xoxo

 

SERENA’S CHEESY TACO BEEFY MACARONIServed with Sour Cream Mashed Potatoes

half of a small onion, a little vegetable oil in a large pan

.. cook onions then add in 1 pound of ground beef, salt and pepper.


once browned drain off grease.

Put some macaroni noodles in salted boiling  water with a  tsp of veg oil..

Now grab your Taco Seasoning.. I got mine from Sam’s it is really good.. I don’t measure how much I used.. I just sprinkled some on and I will taste and add more later to my liking as my meal comes together…

next I added some leftover corn I had from yesterdays dinner in the fridge.. you can add a whole can if you want or a half a can.. your choice

now comes the good part.. I got a big hunk of velveeta cheese here.. cut it into cubes and throw in the pan

now I open and drain a can of dark red kidney beans to add to my pan

turn down heat to a simmer as you stir to melt the cheese, you want the beans to soften as well..

Next I got some of my homemade chunky garden salsa out of the fridge…

I added a half a cup.. if you don’t have any homemade chunky salsa just buy you some of the mild chunky salsa

stir in..

Now taste and add a little more taco Seasoning to your desired taste

turn off heat it is done

Enjoy with Sour Cream Mashed Potatoes.. very relish for a cold day
