MEMPHIS STYLE BBQ PASTA

So I tried this style of recipe just because it sounded interesting.. Hubby really liked it but I myself would rather just had my bbq ribs over some hot mashed potatoes .. it was just ok for me .. not bad.. not great.. just ok. But I guess I will be making it again because my hubby actually loved it .. go figure.

So I used some beef short ribs with just some salt and black pepper and a small bit of water on low while I was working and let them cook down to nice and tender adding some bbq sauce to them towards the end of cooking.

When I was ready to make the pasta I just got out 2 pots.. one to boil my pasta (you can use spaghetti but I chose to use rigatoni a wide noodle to sop up all that bbq and sauce later). Boil it in Salted water.

and 1 pot to make my sauce.

Chop up a little bit of onion ( no need to measure, however much you like, I just did 1/3 cup onion diced small) and about 3 Tbsp finely chopped bell pepper, and 3 large garlic cloves chopped small.

add a tbsp oil to your pot, throw in your garlic, onion and bell pepper, and a small tab of butter.. saute till you smell your garlic and then add in a can of Hunts Tomato Paste and a can of Italian basil Petite tomatoes, add salt and black pepper, Parsley and 1 cup BBQ sauce. If you have people who don’t enjoy chunky sauce at this point you can use a stick emulsion blender to smooth it to your your liking or if you love the chunky sauce then leave it as is.

Now I added my shredded BBQ Beef Short Ribs to my sauce

I forgot, I also added a few drops of liquid smoke for a bit more smoky flavor to my sauce. .. if you smoked your actual BBQ Ribs you won’t need to do this .. but mine was done in crock pot while I was at work so this gave it an extra bit of smoky flavor.

Add in a little Brown Sugar to taste, some pasta water and some Parmesan cheese to desired thickness and taste.

Lastly, ladle in your pasta on top of sauce, then before stirring in, shake with parmesan cheese, add a few slivers of butter, and a shake of black pepper and fold into the sauce.

Great with crusty bread and green beans.
