Okay guy’s so this happens to ALL of us sometimes.. for any number of reasons.. your fruit although tastes better and sweeter the riper it gets, also loses it’s natural pectin the riper it get’s .. or you could have simply not cooked your mixture long enough.. you could have had too much juice, or you could have too high water content in your juice.. many variables can go wrong.. Jelly making is easy but it is one of those recipes that must be exact..

So.. what to do if your jelly did not jell?

You can try reboiling and add another pkg of pectin but you run the risk of it getting tough and very cloudy and overall just not as good.. OR you can take this as you have just made SYRUP.. for pancakes, and for ice cream .. and trust me.. it is DELISH.. My kids love blueberry pancakes, and I have some Concord Grape Syrup here that was supposed to be jelly last year.. but it didn’t jell.. the first batch did wonderful but this second batch did not.. Well we use it on blueberry pancakes and the kids adore it.. who am I kidding.. I do too!!!!

And it really goes nicely with the blueberries.. you almost can’t tell your eating grape syrup, it is so much like blueberry.. and have  you seen the prices of the fancy syrups in the grocery stores?

So don’t get bummed out when your jelly doesn’t jell.. enjoy the syrup and make another batch of Jelly.
