When ready to frost 2 layer cake always cool completely

Brush off any loose crumbs

Place one layer topside down on plate

Spread about 1/3 c frosting over top

Place second layer top side up on first layer

Spread a very thin layer of frosting on sides of cake to seal crumbs

Spread remaining frosting on sides and top of cake garnish

 

When dusting a plain cake with confectioner’s sugar, first place a doily over cake, then dust generously over doily to create fancy design effect. 

**Sometimes freezing a cake for30 min makes it more firm and easier to put icing and decorative touches without the fragile cake falling apart. Just make sure to dust the crumbs before freezing. 

 

**For a cleaner plate when decorating with icing, just remember to put wax paper down around and slightly under the edges of cake before you start to icing. Remove very slowly and carefully.
