  • HOMEMADE PEPPERONI ROLLS recipe taken from Lego Church Of Jesus Cookbook Submitted By : Brenda Johnson
Pepperoni rolls were started in West Virginia by an Italian store owner who made them for the coal miners to take when them a hearty meal that would hold up all day, that could easily be eaten one handed, and still be delicious and satisfying to the miners!
it has become a West Virginia treat.

Get you a great big mixing bowl (cafeteria size) in it put 2 1/2 cups of good all purpose flour (Hudson Cream)
about 1/2 cup of sugar
2 Tsp salt

and 2 pkg’s or two Tbsp of Rapid rise yeast like fleiscmann’s,

in a SEPARATE bowl

take 1 egg

1 stick of butter

and 2 cups of Hot Water (hot not steaming)

try to mix up best you can with a fork the hot water will melt the butter as you work at it with the fork

…..then take 3/4 of the liquid and start slowly adding to the flour mixture….

use a wooden spoon till gets to a loose ball…..

add the rest now

then at this point take about 2 cups of flour and start to knead into the ball you may have to add a little more until it is not so sticky (it’s according to the humidity and temp) …..

make it smooth and put in a warm spot with a slightly damp towel over top for 1 hour it will double in size…

at this point if you are making dinner rolls you punch back down and let rise again, BUT since you are making pizza or Pepperoni rolls you don’t have to let rise again….. you can shape them long or round

take some flour and dust your bread board… then start pinching off dough and roll it out then add your pepperoni

 

you can go a step further and add cheese if you like. I even sometimes add some sauce but mostly we just dip our rolls in sauce later so they can stay fresh for a good while.

 

and fold it up  like a package place on a lightly greased cookie sheet

and bake at 400 for 15 to 20 min (according to your oven) when almost done brush the tops of the bread with melted butter or a mixture of egg white and melted butter with a tad of parsley flakes.. brush on then shake parmesan cheese over top

….. Enjoy

you can make your pep rolls smaller than I do LOL and it will go further

PS you can put cheese inside the rolls if you want.. … any kind will work… I found the long strips of cheese you buy for kids.. you know those individual wrapped ones work well too.. you have to cut them in chunks.. you can put sauce in too if you are going to eat them right away but I recommend just dipping in sauce cause if you put the sauce inside and don’t eat right away they become soggy.


tips

I just knead it IN the big mixing bowl… makes it easier and less mess…. you can then use your board and dust it with flour will shaping your calzones pep rolls ect….

if in a hurry and want to use a sauce for pizza or pepp rolls or calzone that is already made, don’t buy pizza sauce get the PREGO TRADITIONAL it has a good taste on this bread,  and you done spent all the work on the bread this is just easier unless you already canned some sauce yourself beforehand..

 

if you decide to do just rolls I forgot to tell you BEFORE you let them rise a second time you

grease your pan and make little balls about the size of a large meatball and place them few inches apart in the pan neatly then cover them let them raise a hour then put in oven and bake till brown about 15 20 min according to your oven…and brush melted butter on top
