GINGER CHICKEN

Ginger Chicken *Heart Healthy*
Ingredients:
4 boneless skinless chicken breasts – cubed (frozen or slightly frozen is best)
1 large red bell pepper- sliced into finger width strips
1 large red onion – diced
4 Cloves of garlic- minced (may use fresh from a jar 1 teaspoon)
2 Tablespoons of olive oil
1 teaspoon ground ginger
1 Tablespoon soy sauce
1 teaspoon sesame oil
½ cup Splenda brown sugar
In large skillet, add olive oil and onion and peppers. Sauté on med-high heat until edges are starting to brown. Add garlic and raw chicken and cook until chicken is done usually about 10-15 minutes. The mixture should be juicy. Add Splenda, soy sauce, sesame oil and ginger. Stir and cook until well mixed. Remove from heat and enjoy.
