Honestly this is not a pie I or my mother made.. We always made the cold Strawberry Pies with homemade strawberry glaze and some coolwhip on top.. However the other day a bus driver at work was telling me about his mom’s old time Strawberry Pies, and how she would slice the strawberries and add sugar he recalled, and put in a pie pastry then cover and bake.. he said she served the pie to him with milk.  And he said it was the best!!! I don’t know why my mom never made me a strawberry BAKED pie.. LOL cause she made everything else.. we make baked peach pies, pear pies, Apple and Strawberry Rhubarb of course…So WHY NOT plain ole strawberry baked pie? LOL !!!

 

.. I do not have his mother’s recipe.. but this is what I have done with my strawberries.. I think they smell wonderful.

FRESH BAKED -STRAWBERRY PIE

3 Quarts Fresh Strawberries

1 cup granulated Sugar

1/2 tsp salt

3 Tbsp Cornstarch mixed in cup with 4 Tbsp of cold water.. mix with fork to thin  watery paste

2 Pie Crust Shells

2 Pie Crust for top

Milk and sugar to brush on top

START by making your pie crusts.. you need 4 in total that would be 2 double pie crusts..

but today I am only making one double pie crust (I already had two frozen pie shells on hand so I used those for my bottoms.. and then I only had to make one double pie crust for the tops..

Divide your pie dough, wrap with saran wrap and put into chill..

ASSEMBLY:

Wash Berries, Hull tops, and slice, you can slice diagonally if you wish but I sliced mine into rounds..

now put berries in bowl and add one whole cup of sugar toss berries..

Take in a cup and add 3 Tbsp of Cornstarch, add 4 Tbsp or so of Cold Water to the cup and mix with fork until it is a thin watery liquid paste that can be poured

 

Pour the liquid paste over top of your berries and toss..

 

 

Add your salt and toss it all with fork lightly

 

Put Berries in both waiting unbaked pie shells, (I already had two frozen pie shells on hand so I used those for my bottoms.. and then I only had to make one double pie crust for the tops..

 

now take top crust and put over top.. cut vent holes for steam to escape.. , YOu can also make lattice work over top if you would rather it be prettier, the red really shows through lattice work.

 

Now put in preheated oven of 450 degrees for 10 minutes.. then put oven to 350 degrees and bake for 40 minutes or till nice and browned .

Take out and let set up before cutting

 

Store in fridge..

Serve with Milk over top.
