40 bakede tostidas scoops

olive oil spray

1 pound of 99% fat free ground turkey

salt and pepper to taste

3/4 to 1 cup mild, meduim, or hot salsa to taste

Place 10 scoops on each of four dinner plates

place a large nonstick skillet over medium-high heat. When hot lightly coat with olive oil spray and add the turkey. season with salt and pepper. Cook breaking into bite size chunks and stirring with a spatula or wooden spoon until no longer pink. Stir in the salsa. Divide the mixture evenly among the scoops ( about 1 heaping TBS per scoop) and serve

Makes 4 servings.
