Wanted to get this posted since these do take awhile to make. These taste just like sweet gherkin pickles only in the sliced form.
Crystal Chip Pickles;
You will need 25 medium cucumbers.
Wash and soak in 1 gallon of water with 1 quart of salt in a large crock.
Put a weighted down plate on top of the cuc’s to keep them submerged.
After two weeks, wash and slice thin.
Put in fresh water with 1 Tablespoon of powdered alum overnight. Drain.
Cook together until boiling; 1 quart white vinegar, 2 cups water, 2 quarts sugar, 1 Tablespoon whole cloves and 2 sticks of cinnamon.
Pour over sliced pickles and let stand overnight.
Pour this off and reheat for 3 mornings.
On the 4th morning pour off, heat to boiling and pack in sterilized jars.
Process in boiling water bath for 20 minutes.
I actually heat the liquid and pack the pickles into the jars, then process.
These are soooo crispy.
My crock is really heavy so my hubby has to help me with the draining.
