COWBOY CASSEROLE

This recipe was one a girl shared from her family on Facebook.

1 1/2 pounds of ground beef

1 can ranch style beans

1 can rotel

I can corn drained

1 can cream style corn

2 boxes jiffy style cornbread mix

eggs and milk for the cornbread mix

Preheat oven to 400

Brown the ground beef

with seasonings she used onion powder, garlic powder, chili powder, cumin and salt ( I would do chopped onion, minced garlic clove, salt , black pepper, a little Toney’s)

Drain grease add in rotel beans and whole kernel corn.

bring to a boil then lower to a simmer

Prepare cornbread to package directions then add in the cream style corn.

Add ground beef mixture to a 9×13

pour cornbread mixture over top

bake 20-30 minutes or till golden brown

enjoy with toppings when it comes out like shredded cheese and sour cream, jalapeños, fresh cold diced tomatoes, or salsa or hot sauce, or just eat it as is.

NOTE : One commenter even said she made it and instead of going with the above toppings she ate hers with fried cabbage and loved it as a meal
