CHICKEN BROTH FROM SCRATCH

makes about 2-3 quarts of chicken broth plus about 8 cups cooked chicken

3-4 pounds chicken parts

1 large onion  quartered

4 medium stalks of celery chopped

4 garlic cloves

4 quarts of water

salt

combine chicken onion celery garlic and some parsley in large stock pot. Add in your water cover and bring to boil .. Immediately reduce your heat to a gentle simmer for about 2 hours with the lid partly on. Season to taste with salt

Strain into a clean pot and discard your vegetables, (unless making a soup if making soup you will keep your veggies) remove the meat from the bones and you can refrigerate or freeze your meat for later  use unless like I said you are making a soup with this broth.

Chill your broth for several hours and skim off and discard the fat that rises to the surface and hardens. Use the broth immediately or cool cover and refrigerate. The broth and meat will keep in fridge up to 3 days or 5 months in the freezer.
