CHEESY POTATO CAKES

Leftover Mashed Potatoes..

add in some cheddar cheese shredded

mix well with fork

Add in crushed Saltine Crackers.. (I had wheat saltines this time so I used those)

now add one egg

mix in with fork,  then if consistency is too thin add in m ore crushed crackers.. remember your consistency is everything.. if it isn’t right the potato cakes will fall apart.

Put some oil in a cast iron skillet.. get it hot and ready to go..  You can patty and fry straight out like I did these four here if you desire

they work just fine that way.. but I prefer to dust mine lightly with self rising flour THEN fry them.. like this

I think they come out crispier that way.. but do as you like..  you can add onion or peppers to them whatever.. many ways to enjoy your potato cakes..
