Carrot Walnut Bread

3/4 cup brown sugar
2 Tablespoons shortening
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup milk
2 medium eggs, lightly beaten
1 cup grated carrot, about 1 large carrot
1/2 cup chopped walnuts

Preheat oven to 375 degrees F. Grease a 9×5-inch loaf
Pan. In large bowl, cream brown sugar and shortening.
Mix in flour, baking powder, baking soda and salt. Add
Milk and eggs and stir until flour is wet. Mix in grated
Carrot and walnuts. Scrape batter into greased loaf pan
And bake for 1 hour or until inserted toothpick comes
Out clean. Remove from oven and let sit for 5 minutes
Before turning out. Let loaf cool on rack..
