Brenda Johnson, here is the breakfast casserole recipe you wanted.

Breakfast Casserole

2 cans crescent rolls

2 lbs sausage (browned, drained and crumbled)

1 pkg. O’Brien frozen potatoes (Ore Ida w/green peppers & onion)

1 pkg. mozzarella cheese, shredded

8-12 eggs, beaten

Spray oblong pan with Pam. Spread crescent rolls to cover bottom and make edge around pan. Layer the sausage, frozen potatoes, cheese. Pour beaten eggs on top.

Bake @325 degrees for 40 min.

**You can prepare this the night before w/ everything except the eggs; add eggs the next morning and bake. It will not appear done due to the potatoes being frozen but it will be.

 

*The next time I make this, I may try thawing the potatoes and letting them drain.
