APPLE COCONUT POUND CAKE
CAKE
1 1/2 c oil
2 c sugar
3 eggs
3 c flour
1 tsp salt
1 tsp baking soda
1 4oz. can coconut
1 c nuts, chopped
1 1/2 tsp vanilla
Mix oil and sugar and add eggs one at a time
add dry ingredients. Add coconut nuts apples and vanilla. Mix well. Pour into greased and floured tube pan. Bake at 325 for 80 minutes. Do not open door while baking.
Icing
1/2 c nuts, chopped
4 oz. cream cheese, softened
2 c. confectionary sugar
4 Tbsp butter, melted
1 tsp vanilla
Mix all ingredients together Spread on cooled cake
