DIET COLA CHICKEN, PEA SALAD, AND FRIED GREEN TOMATOES

Diet Cola Chicken: 3 chicken breasts, 1 regular size can of diet cola, 1 cup ketchup. Place chicken breast in a frying pan on the stove top, pour cola and ketchup over them, bring to a boil, cover, turn to simmer, cook for 45 minutes turning and stirring on occasion…no heartburn, tender, great flavor! A friend assures me this recipe came from Weight Watchers. All I know is it is excellent and a snap.
Pea Salad: 1 small package frozen peas, thawed, drained, 1/2 cup mayo (lite if preferred), 1/2 cup sour cream (lite if preferred), 1/2 medium red onion(diced), 1 cup shredded sharp cheddar cheese, 1 slice ham (rendered), combine all ingredients.

Fried Green Tomatoes: Combine in large mixing bowl the following: 1 cup flour, 1/2 cup corn meal, salt, pepper to taste, in smaller bowl blend 2 eggs. Slice green tomatoes, thinly, and douse them in the egg then dredge them in the flour/corn meal mix. In an iron frying pan place about 1/3 cup of vegetable oil or bacon grease, heat pan until a drop of water pops in the oil, do not allow oil to smoke! Fry the tomatoes 7-10 minutes on each side, then place on a brown paper bag to allow them to drain.
