Ingredients:

· 3″ celery sticks

· peanut butter

· raisins

· peanuts

· granola

Directions:

Spread the peanut butter inside the hollow of the celery sticks and top with raisins. For variety, try using fruit flavored whipped cream cheese or a combination of peanut butter and honey instead of the plain peanut butter.

Easy Wrap Sandwiches for Lunchboxes

Wrap sandwiches first burst upon the lunch scene about 10 years ago. These sandwiches are variations of traditional sandwiches; but the bread is different. Any type of flat bread is spread with a hot or cold sandwich filling, rolled up, and eaten out of hand.

For the wrap, you can use flavored tortillas, cracker bread, rice paper wrappers, cooled crepes, split pita breads, and for low carb eaters, sturdy lettuce leaves. Wraps are a great way to give leftovers new life.

Use your imagination and your favorite ingredients for variations on these easy recipes, and enjoy.

WRAP SANDWICH RECIPES

· Chicken Tomato Wraps

Juicy chunks of chicken are slicked with honey dijon dressing and surrounded with chunks of green pepper and tomato. .

· Lettuce Wrap Sandwiches

Cooked turkey, cheese and Caesar salad dressing give these low carb wraps wonderful flavor. 

· BLT Wrap Sandwiches

These sandwiches can be made ahead of time and placed in an insulated lunchbox along with ice packs or a frozen juice box or two.

· Bologna Slaw Wraps

Bagged coleslaw salad mix combined with cubed bologna, shredded carrot, and American cheese is a classic wrap. 

· Cheesy Roast Beef Wraps

Blue cheese salad dressing and American cheese give flavor and great texture to these cold roast beef sandwiches.

· Chicken Salad Wraps

Use a pre-made deli chicken salad, add lettuce and some shredded cheese to make these delicious and easy wrap sandwiches. 

· Tuna Rolls

Rice paper wraps contain a filling of tuna, peanut butter sauce, coriander, hoisin sauce, and grated carrot for an exotic lunch. If you pack them in a lunchbox, wrap them in damp paper towels so the wraps stay soft. 

· Spiral Sandwiches

Herbed spreadable cheese is a fantastic base for any wrap sandwich. Here it’s paired with sliced turkey, tomatoes, and Swiss cheese. 

· Speedy Veggie Wraps

Use your favorite deli salad, some shredded cheese, sliced tomato, cucumber and your favorite low fat dressing make up these super easy wrap sandwiches.

You can also just put the ingredients for a wrap sandwich into your child’s lunchbox and let them have the fun of making their own lunch; kids love to play with food.

Cold wrap sandwiches are perfect for lunchboxes. The bread stays nice and firm, the sandwiches are easy to eat as long as they are firmly held, and you can transform almost any ingredient into a wrap sandwich. 

VANILLA PEACH PUDDING CUPS

Sprinkle the granola over the dessert just before you serve it. If you’re packing this dessert in a lunchbox, pack the granola separately in a little bag so it stays crisp.

Ingredients:

· 1 (3 ounce) package French vanilla pudding mix

· 2 canned peaches, drained

· 1/3 cup granola

Directions: 

Prepare pudding mix as directed on package. Spoon into four small Tupperware or other resealable containers. Chop peaches and divide among containers; do not mix into pudding. Divide the granola into four portions, place in small zip-lock bag, and attach to container.
