6 whole wheat lasagna noodles – uncooked

jar o’ sauce

half a container of fat free cottage cheese

2 cups of mozzarella

2 cups of veggie (I either use half/half zucchini and frozen spinach, or just spinach, drained and rung dry)

chopped black olives (optional)

Preheat oven 350ish. In a 2 qt. rectangular dish layer as follows: 1/3 sauce, 3 uncooked noodles, 1/3 sauce, cottage cheese, 1/2 mozzarella, veggies, salt and pepper, remaining noodles, remaining sauce. Cover tight with foil and bake for 1 hour to 1: 15..ish. Top with remaining cheese and back in oven until melted.

Sometimes the sauce wants to escape so I place a cookie sheet underneath, on the bottom rack.
