TUSCAN SAUSAGE PENNE PASTA

whole box of penne pasta cooked in salted water

Brown 1 pound ground sausage (if not using Italian sausage, add in some red pepper flakes and oregano)

three cloves fresh garlic minced

butter size of small egg

1 1/2 cups parmesan cheese or more

2 cups heavy cream

1 8 oz block cream cheese

1 1/2 cups chicken broth

Sun dried tomatoes handful

parsley flakes

black pepper

Fresh baby spinach (half container- about two handfuls)

Put Penne on to boil with salted water

Start out with egg size of butter, and minced garlic,  careful not to burn garlic, as soon as garlic starts to get aromatic, throw in your cream, and cream cheese, add in parmesan cheese, black pepper, and parsley flakes.

once it starts to heat you use a whisk to cream up the cream cheese and then add in your chicken broth, it will thicken as it cooks.

Add in your sun dried tomatoes and your drained sausage, add your baby spinach and let it cook down.. I like to take my emulsifier and blend  the wilted spinach just a tad but not necessary..

Add in the penne pasta and shake with parmesan. Toss well

and enjoy with hot garlic bread.
