Here’s the recipe for the Stained Glass Window cookies:
5 oz. butter
1/2 cup powdered sugar
1 egg
1 tsp. vanilla
1/3 cup custard powder or cornflour
2 cups plain flour
1/4 cup self-raising flour
assorted boiled hard candy (I used Jolly Ranchers)
beaten egg to glaze
Line baking trays with baking paper. Beat the butter and powdered sugar till light and creamy. Add egg and vanilla, beat till fluffy. Beat in the custard powder. Fold in the combined sifted flours.
Turn out onto a lightly floured surface and knead gently till just smooth. Roll dough between 2 sheets of baking paper to 1/8″ thickness.
Preheat oven to 400F. Separate candy into different colors and finely crush with rolling pin. Cut out dough with desired design 3″ cutter. Use a smaller cutter 1″ or bigger to cut out shapes in the middle of the cookie.
Glaze cookies and bake for 5 mins. Fill cut out section with different colored candy. Bake for 5-6 mins. or until candy has melted. Leave for 10 mins. before cooling on wire rack.
